Recap & Prep

Well this Monday flew by and I didn't get nearly as much as I wanted to.  Let's be real though, I never get as much done as I want! #procrastinator  Hence, why I'm writing this post at 11pm instead of 11 am.  Anyway, I thought I would do a little recap of my weekend and share a bit about my adventures for this week.
This weekend wasn't too eventful; work, sleep, baking, painting, more sleeping.  Saturday morning I decided to do a little baking and since I have been obsessing over New Orleans I decided to make beignets! So beignets (French donuts) are a New Orleans staple, it's just a known fact.  All the articles and blog posts that I have read about things to do in NOLA include eating tasty beignets at Cafe du Monde, which I will most definitely be doing this fall! Typically they are fried, which sounds delicious, but to make them a bit healthier I decided to make them baked.  I searched all over the web for baked beignet recipes and ended up taking bits and pieces from 3 different recipes.  The one that I took the most from though was the Skinny Baked Beignets recipe from the blog Crazed Mom.  For my first time making them, and my first time working with yeast, they actually turned out pretty good!

As you can see in the picture, you're supposed to sprinkle them with powdered sugar, but my powdered sugar was tasting real wonky so I got rid of that nastiness and ended up cutting them open and putting strawberry jam on them.  It was so good!
Baking took up most of my Saturday morning and work took up the rest of the day.  Sunday was pretty chill.  My family went to church, then we went out to my brothers new town house to help paint.  Me being the dork that I am, wasn't thinking and wore a pair of nice jeans which I got paint on.  Then Sunday night I went to a yoga class that my mom was teaching and my body has been feeling that all day.  I haven't taken yoga in awhile so I can literally feel every single muscle we worked.
Now on to my adventures for this week! Tomorrow morning I am leaving for St. Louis to play a couple shows and be a tourist.  My mom and our friend Dawn are coming with me so it's going to be a ladies road trip. Tuesday night I am playing at BB's Jazz, Blues, and Soups and Wednesday night I will be playing at Evangeline's.  Both shows start at 7pm.
I'm super excited to go back to St. Louis.  I had a great time the last time I was there when I played at Evangeline's, but I didn't have time to really see the city.  Luckily this time I have a whole day to explore so that is exactly what we are going to be doing.  One thing that is definitely on my to do list is go to the arch.  I have driven by it so many times going to Nashville, but have never actually stopped to see it.  Do you guys have any suggestions for things to do? Let me know in the comments!
So I've been spending the day getting ready to leave, kind of.  That's where the procrastination comes in again.  I could've changed my guitar strings and battery and all that kind of stuff last week, but no I waited till this evening to do it.  Also, I just started packing at 9:30pm, which is pretty typical for me.  Last minute packing is kind of my thing and surprisingly I don't forget things very often!
I'll be posting about my trip when I get back, but I'll be posting on Instagram and what not while I'm there if you want to check it out! Thanks for reading all the way to the end.  Hope you have a fantastically exciting week!
